These dry-rub french fries pack all the bold, smoky flavor of a backyard barbecue into a single crispy bite.
Ingredients
- 1 pound russet potatoes
- Oil for deep-fat frying
- DRY RUB:
- 4-1/2 teaspoons smoked paprika
- 1 tablespoon packed brown sugar
- 1 teaspoon salt
- 1 teaspoon coarsely ground pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground mustard
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1/2 teaspoon celery salt
- 1/4 teaspoon cayenne pepper
Directions
- Cut potatoes into 1/4-in. julienned strips; soak in cold water for 30 minutes.
- Meanwhile, combine dry rub ingredients in a large bowl; set aside.
- Drain potatoes; pat dry with paper towels. In an electric skillet or deep-fat fryer, heat oil to 340°. Fry potatoes in batches until lightly browned, 3-4 minutes. Remove with a slotted spoon; drain on paper towels.
- Increase heat of oil to 375°. Fry potatoes again in batches until crisp and golden brown, 1-2 minutes, turning frequently. Drain on paper towels; toss with dry rub. Serve immediately.
