Making aebleskivers at home requires a special pan and some patience, but once you taste the piping hot pancake balls with jam or syrup, it's all worth it.

Ingredients

  • 3 large eggs, separated
  • 2 cups buttermilk
  • 4 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1-1/2 teaspoons sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cardamom, optional
  • Confectioners' sugar and maple syrup, for serving

Directions

  1. In a large bowl, whisk egg yolks, buttermilk, melted butter and vanilla extract until blended. In another bowl, whisk flour, baking powder, sugar, baking soda, salt and cardamom, if using. Stir into egg mixture just until moistened. In a small bowl, beat egg whites on high speed until stiff but not dry. With a rubber spatula, gently stir a quarter of egg whites into batter. Fold in remaining egg whites.
  2. Place a greased aebleskiver pan over medium heat. In batches, pour 2 tablespoons batter into each cup. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve warm with confectioners' sugar and maple syrup.
