Ever heard of crispy pasta salad? Our colorful (and crunchy) recipe is a flavorful mashup of viral crispy pasta and a classic taco salad.
Ingredients
- 2 cups uncooked rotini pasta
- 3 tablespoons olive oil, divided
- 1 package (1 ounce) taco seasoning
- 3 cups shredded lettuce
- 2 cups cherry tomatoes, halved
- 1 cup shredded cheddar cheese
- 1/2 cup finely chopped red onion
- 1/2 cup chopped green pepper
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons lemon juice
Directions
- Preheat the oven to 400°. Line a rimmed 15x10x1-in. baking sheet with parchment paper.
- Cook pasta according to the package instructions; drain. Transfer to a large bowl. Toss the pasta with 2 tablespoons olive oil and 1 tablespoon taco seasoning. Spread the pasta in an even layer on the prepared baking sheet. Bake 25-30 minutes or until crispy and golden.
- Meanwhile, in a large bowl, toss together lettuce, tomatoes, cheese, onion, peppers, black beans and olives.
- In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, remaining 1 tablespoon olive oil and remaining taco seasoning. Toss the salad with the dressing. Stir in the crispy pasta. Serve immediately.
