Creamy Miso Pasta

This creamy miso pasta is a quick and easy comfort, with noodles tossed in a silky, umami-packed sauce made with butter, Parmesan and plenty of black pepper.
Ingredients
- 8 ounces uncooked long thin pasta (spaghetti, linguine or fettuccini)
- 3 tablespoons white miso paste
- 1/4 cup butter, cubed, divided
- 1 teaspoon coarsely ground pepper
- 1/2 cup finely shredded Parmesan cheese
- Optional: Thinly sliced green onions, sliced Thai red chilis and chili crisp
Directions
- Cook pasta according to package directions for al dente. Drain; reserving 3/4 cup pasta water.
- In a small bowl, whisk 1/2 cup reserved pasta water with miso paste. Set the remaining pasta water aside.
- In a large skillet, heat 2 tablespoons butter and pepper over medium heat. Add the miso mixture; heat through. Add pasta, Parmesan cheese and remaining 2 tablespoons butter, stirring constantly until cheese is fully melted. Add additional pasta water if sauce appears too dry.
- If desired, sprinkle with additional Parmesan cheese, fresh cracked pepper, green onions, Thai chilis and chili crisp.
