Creamy Miso Pasta

This creamy miso pasta is a quick and easy comfort, with noodles tossed in a silky, umami-packed sauce made with butter, Parmesan and plenty of black pepper.

Ingredients

  • 8 ounces uncooked long thin pasta (spaghetti, linguine or fettuccini)
  • 3 tablespoons white miso paste
  • 1/4 cup butter, cubed, divided
  • 1 teaspoon coarsely ground pepper
  • 1/2 cup finely shredded Parmesan cheese
  • Optional: Thinly sliced green onions, sliced Thai red chilis and chili crisp

Directions

  1. Cook pasta according to package directions for al dente. Drain; reserving 3/4 cup pasta water.
  2. In a small bowl, whisk 1/2 cup reserved pasta water with miso paste. Set the remaining pasta water aside.
  3. In a large skillet, heat 2 tablespoons butter and pepper over medium heat. Add the miso mixture; heat through. Add pasta, Parmesan cheese and remaining 2 tablespoons butter, stirring constantly until cheese is fully melted. Add additional pasta water if sauce appears too dry.
  4. If desired, sprinkle with additional Parmesan cheese, fresh cracked pepper, green onions, Thai chilis and chili crisp.
