Cranberry Orange Cookies

Cranberry orange cookies with a sparkly sugar coating may look and taste like the holidays, but they're delicious any time of year.
Ingredients
- 1/3 cup butter, softened
- 1/2 cup packed brown sugar
- 1/3 cup sugar
- 1 large egg, room temperature
- 3 tablespoons grated orange zest
- 1 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1-1/4 cups dried cranberries
- 1/2 cup coarse sugar
Directions
- In a large bowl, beat butter and sugars until crumbly, about 2 minutes. Beat in egg, orange zest and vanilla. Combine the flour, salt and baking soda; gradually add to butter mixture and mix well. Stir in cranberries.
- Drop by tablespoonfuls into coarse sugar; press into tops. Place sugared side up onto parchment-lined baking sheets 2-in. apart. Bake at 350° until lightly browned, 8-10 minutes. Cool for 1 minute before removing to wire racks.
