Cranberry Orange Cookies

Cranberry orange cookies with a sparkly sugar coating may look and taste like the holidays, but they're delicious any time of year.

Ingredients

  • 1/3 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/3 cup sugar
  • 1 large egg, room temperature
  • 3 tablespoons grated orange zest
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1-1/4 cups dried cranberries
  • 1/2 cup coarse sugar

Directions

  1. In a large bowl, beat butter and sugars until crumbly, about 2 minutes. Beat in egg, orange zest and vanilla. Combine the flour, salt and baking soda; gradually add to butter mixture and mix well. Stir in cranberries.
  2. Drop by tablespoonfuls into coarse sugar; press into tops. Place sugared side up onto parchment-lined baking sheets 2-in. apart. Bake at 350° until lightly browned, 8-10 minutes. Cool for 1 minute before removing to wire racks.
