Cowboy Potatoes

Add some giddy-up to your morning with these hearty cowboy potatoes, which are packed with peppers, onions, ground pork, barbecue sauce and cheddar.

Ingredients

  • 2 pounds red potatoes, cut into 1-in. pieces
  • 1 medium sweet red pepper, cut into 1-in. pieces
  • 1 medium red onion, cut into 1-in. pieces
  • 3 tablespoons olive oil, divided
  • 1 package (1 ounce) taco seasoning
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 pound ground pork or crumbled breakfast sausages
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup barbecue sauce
  • 1 cup shredded cheddar cheese
  • 1/4 cup pickled jalapeno slices
  • 2 tablespoons chopped green onions
  • Sour cream, for serving, optional

Directions

  1. Preheat oven to 425º. Line two 15x10x1-in. rimmed baking sheets with parchment paper.
  2. In a large bowl, combine potatoes, peppers and onion. Toss with 2 tablespoons olive oil, taco seasoning and oregano. Spread the potato mixture in a single layer on the prepared baking sheets. Sprinkle with salt and pepper. Roast 15 minutes; stir. Roast until lightly browned and fork-tender, another 15-20 minutes.
  3. Meanwhile, heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Add the ground pork; cook until browned, 8-10 minutes, breaking it up with a wooden spoon as it cooks. Stir in red pepper flakes. Transfer to a paper towel-lined plate. Wipe out the skillet.
  4. Place the ground pork and roasted vegetables in the skillet. Stir in barbecue sauce. Top with shredded cheese and pickled jalapenos. Broil until the cheese is melted and bubbly, 2-3 minutes.
  5. Top with green onions and sour cream to serve, if desired.
