Cowboy Coleslaw

Cowboy coleslaw is a flavor-packed mashup of cowboy caviar and coleslaw tossed with a creamy chipotle dressing and topped with crunchy corn chips. It's bound to be a hit at your next potluck.

Ingredients

  • 1 package (10 ounces) coleslaw mix
  • 1 package (10 ounces) frozen corn, thawed
  • 1 cup finely chopped red onion
  • 1 cup chopped sweet red pepper
  • 1 cup cherry tomatoes, halved
  • 1 can (15 ounces) pinto beans, rinsed and drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • DRESSING:
  • 1/3 cup mayonnaise
  • 1/3 cup plain Greek yogurt
  • 1/2 cup fresh cilantro leaves
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves
  • 2 tablespoons chopped chipotle peppers in adobo sauce
  • 1 tablespoon taco seasoning
  • 1/4 teaspoon salt
  • GARNISH:
  • 1 cup corn chips

Directions

  1. In a large bowl, combine coleslaw mix, corn, onion, pepper, tomatoes and beans.
  2. In the bowl of a food processor or blender, blend cilantro, mayonnaise, Greek yogurt, lime juice, garlic, chipotle peppers in adobo sauce, taco seasoning and salt until well combined, scraping the sides of the bowl as needed.
  3. Add the dressing to the salad; toss to coat. Top with corn chips to serve.
