Copycat First Watch Million-Dollar Breakfast Sandwiches

Ingredients

  • 3 tablespoons butter, divided
  • 4 large eggs, room temperature
  • 4 slices Gouda cheese
  • 4 pork sausage patties, cooked
  • 4 slices Million-Dollar Bacon
  • 4 English muffins, split and toasted
  • 4 teaspoons hot honey
  • 1 cup fresh arugula, divided
  • Optional: Mixed greens with lemon vinaigrette

Directions

  1. Heat 1 tablespoon butter in a large nonstick skillet over medium heat. After the butter has melted, reduce heat to low. Working in batches if needed, crack eggs into the pan. Cook until the whites are starting to set; flip. Cook another 30 seconds or until the whites are fully set and the yolks are jiggly; remove to a plate.
  2. Add 1 tablespoon butter to the same skillet over medium heat. Add sausage patties; cook until golden brown and the internal temperature reaches 145º, 2-3 minutes per side. Top each patty with a slice of Gouda. Cover; cook until the cheese is bubbly and melted, 1-2 minutes. Remove to a separate plate. Spread the remaining 1 tablespoon butter on the toasted English muffins.
  3. To build the sandwiches, stack the sausage patties on top of English muffin halves. Top each with a slice of bacon, an egg and arugula. Drizzle each with hot honey; top with the remaining English muffin half. Serve immediately with mixed greens tossed in lemon vinaigrette on the side, if desired.
