Ingredients

  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 3 tablespoons packed brown sugar
  • 2 tablespoons harissa chili paste
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/8 teaspoon cayenne pepper, optional
  • 2 pounds boneless skinless chicken thighs
  • 1/2 cup honey

Directions

  1. In a small bowl or shallow dish, combine the first 10 ingredients. Add chicken; turn to coat. Refrigerate, covered, for 8 hours or overnight.
  2. Drain chicken, discarding marinade. Place a large skillet coated with cooking spray over medium heat. Add chicken; cook 5-6 minutes per side or until internal temperature reaches 165°, basting with honey during the last 5 minutes. Transfer to a cutting board or plate; let rest 5 minutes before slicing into 1/2-in. pieces.
