Ingredients
- 1 package white cake mix (regular size)
- 1 cup Cheerwine soda
- 3 large eggs, room temperature
- 1/3 cup canola oil
- 1 teaspoon almond extract
- 1 teaspoon cherry extract
- 3 to 4 drops red food coloring
- 1 jar (16 ounces) maraschino cherries, drained, chopped and patted dry
- ICING:
- 3 to 4 cups confectioners' sugar
- 1/2 cup butter, softened
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup white baking chocolate, melted
- 1 teaspoon almond extract
Directions
- In a large bowl, beat together cake mix, Cheerwine, eggs, oil and extracts on high for 3 minutes. If desired, add food coloring. Fold in half the chopped cherries. Spoon into a greased and floured 10-in. fluted tube pan.
- Bake at 350° until a toothpick inserted near center comes out clean, 35-40 min. Cool for 15 minutes; remove from pan to a wire rack to cool completely.
- Meanwhile, in a large bowl beat together icing ingredients. Fold in remaining half of the chopped cherries. Spread or pipe over cooled cake. Garnish with additional maraschino cherries, if desired.
