Cheerwine Cake

It’s untraditional, but this Cheerwine cake is a unique Southern dessert, from the Cheerwine soda to the Bundt cake shape.

Ingredients

  • 1 package white cake mix (regular size)
  • 1 cup Cheerwine soda
  • 3 large eggs, room temperature
  • 1/3 cup canola oil
  • 1 teaspoon almond extract
  • 1 teaspoon cherry extract
  • 3 to 4 drops red food coloring
  • 1 jar (16 ounces) maraschino cherries, drained, chopped and patted dry
  • ICING:
  • 3 to 4 cups confectioners' sugar
  • 1/2 cup butter, softened
  • 1 package (8 ounces) cream cheese, softened
  • 1/2 cup white baking chocolate, melted
  • 1 teaspoon almond extract

Directions

  1. In a large bowl, beat together cake mix, Cheerwine, eggs, oil and extracts on high for 3 minutes. If desired, add food coloring. Fold in half the chopped cherries. Spoon into a greased and floured 10-in. fluted tube pan.
  2. Bake at 350° until a toothpick inserted near center comes out clean, 35-40 min. Cool for 15 minutes; remove from pan to a wire rack to cool completely.
  3. Meanwhile, in a large bowl beat together icing ingredients. Fold in remaining half of the chopped cherries. Spread or pipe over cooled cake. Garnish with additional maraschino cherries, if desired.
