Blueberry Brie Grilled Cheese

The addition of hot honey gives this blueberry Brie grilled cheese a slow, sneaky heat that keeps you reaching for bite after bite.
Ingredients
- HOT HONEY BLUEBERRY COMPOTE:
- 1-1/2 cups fresh blueberries
- 1 tablespoon water
- 1 teaspoon fresh lemon juice
- 2 tablespoons hot honey
- GRILLED CHEESE:
- 6 tablespoons butter, softened, divided
- 8 slices sourdough bread
- 8 ounces Brie cheese, rind removed, sliced
- 1/2 cup fresh blueberries
- 2 tablespoons julienned fresh basil
- 1 teaspoon balsamic glaze
Directions
- In a small saucepan, combine blueberries, water and lemon juice. Cover and cook over medium heat until the berries start to break down, about 10 minutes. Remove from heat and stir in hot honey. Set aside.
- To assemble, spread 3 tablespoons butter on 1 side of each bread slice. Toast bread, buttered side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove from pan.
- Top toasted side of 4 bread slices with half the blueberry compote; top with sliced Brie, fresh blueberries, basil leaves and balsamic glaze. Spread toasted side of remaining bread with remaining compote; place over cheese, compote side down. Spread remaining butter on the outsides of each sandwich.
- Place in same skillet, and cook until bread is golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.
