Apples and Honey Snacking Cake

This apples and honey snacking cake combines two essential Rosh Hashanah foods into a holiday centerpiece that works just as well any day of the week during the fall season.

Ingredients

  • 1 medium orange, quartered
  • 1 medium apple, quartered
  • 1 cup shortening, melted
  • 1 cup sugar
  • 3 large eggs, room temperature
  • 3/4 pound honey
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1/4 cup brewed coffee

Directions

  1. Preheat oven to 325°. Grease and flour a 10-in. fluted tube pan; set aside.
  2. In a food processor or high-powered blender, add orange and apple. Process until finely chopped. Add honey, eggs and coffee, process until well mixed.
  3. In a large bowl, cream shortening and sugar until light and fluffy. Beat in honey mixture. In a large bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, cloves and allspice; gradually beat into creamed mixture until just combined.
  4. Transfer batter to prepared pan. Bake until a toothpick inserted in center comes out clean, about 1 hour.
  5. Cool in pan 10 minutes before removing to a wire rack to cool completely. If desired, dust with confectioners sugar before serving.
