Almond Croissant Cookies

Ingredients
- 1 cup butter, softened
- 3/4 cup sugar
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Additional sugar
- FRANGIPANE:
- 1 can (8 ounces) almond paste
- 1/3 cup sugar
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- 3 large egg yolks, room temperature
- GLAZE:
- 1 cup confectioners' sugar
- 1-1/2 teaspoons almond extract
- 2 to 3 teaspoons water
- 1 cup sliced almonds, toasted
- Confectioners' sugar, for dusting, optional
Directions
- Preheat oven to 375°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in almond extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Roll into 1-1/2-in. balls.
- Place almond paste and sugar in a food processor; cover and process until finely ground. Add the flour and butter; pulse until blended. Add egg yolks; cover and pulse to blend well.
- Scoop almond filling by teaspoonfuls. Flatten one portion of cookie dough; place filling in the center. Wrap cookie dough around filling until completely covered. Place 2 in. apart on parchment-lined baking sheets. Coat bottom of a glass with cooking spray; dip it in sugar. Flatten cookies with prepared glass, dipping glass in sugar again as needed.
- Bake until edges are lightly browned, 10-12 minutes. Cool completely on wire racks.
- In a small bowl, whisk together the confectioners' sugar, almond extract and enough water to achieve glaze consistency. Drizzle over cookies. Sprinkle with almonds. If desired, dust with confectioners' sugar.
